Shalai Resort Review (2026): A Michelin Star on Etna’s North Slope

Rolling hills with Mount Etna in the distance

Shalai is not a resort in the usual sense, whatever the booking sites call it. It is a small hotel in a restored noble palazzo in the centre of Linguaglossa, a quiet town on the north-east slope of Mount Etna, and its real reason to exist is the restaurant downstairs, which holds one Michelin star in the 2026 guide. Add a private spa circuit, the wineries of Etna’s north slope a short drive away and a family that has run the place since it opened in 2009, and you have one of the most interesting places to sleep on the volcano for people who travel to eat. My one-line verdict: book it for the dinner and the wine roads, not for a pool day.

Quick facts: Shalai, Linguaglossa

  • Location: Via Guglielmo Marconi 25, in the historic centre of Linguaglossa, on the north-east slope of Mount Etna, province of Catania.
  • Rooms: a small house of 12 to 14 rooms (the Michelin Guide lists 12, most booking partners 13, one hotel collection 14), from singles and attic doubles to junior suites.
  • Dining: Shalai restaurant, one Michelin star in the 2026 guide, modern Sicilian cooking.
  • Price level: moderate for the rooms, high for the tasting menus. The star is the expensive part of a stay.
  • Season: listed as open all year by one hotel collection, and guest reviews from December 2025 and March 2026 confirm winter stays. Our Etna wine guide notes past closures over Christmas and in January, so ask the hotel for winter dates.
  • Nearest airport: Catania Fontanarossa, roughly 60 km, about 50 to 60 minutes by car.
  • Best for: food lovers, couples and wine travellers touring the north slope.

With only around a dozen rooms, Shalai fills quickly in harvest season and on summer weekends. Compare dates early, and book the restaurant at the same time.

Location and getting there

Green landscape below Mount Etna

Linguaglossa sits at around 550 metres on the north-east flank of Etna, between the pine forests that climb towards the Etna Nord area at Piano Provenzana and the vineyards that run west towards Castiglione di Sicilia, Passopisciaro and Randazzo. It is a working town rather than a postcard village, quiet after dark, and Shalai stands right in its centre.

The nearest airport is Catania Fontanarossa. Booking platforms put it at about 60 km, roughly 50 to 60 minutes by car, though one hotel collection quotes a shorter straight-line distance. The hotel offers paid airport transfers; ask for the current price. Taormina is about 42 km away, so allow 45 minutes to an hour, and the Ionian coast at Riposto and Fiumefreddo is closer still. On Etna I would hire a car: the wineries, the summit roads and the coast are spread out, and taxis are scarce. Free parking is listed, although one booking site notes that spaces cannot be reserved.

Rooms

The hotel occupies part of a noble palazzo that once belonged to the Pennisi family, who still own and run Shalai, and which later served as Linguaglossa’s town hall. Sources date it to the 18th or 19th century; inside, frescoed ceilings and stucco meet contemporary furniture and Liberty details. The palazzo was refurbished before the hotel opened in 2009.

Our research turned up contradictory information on the room count: the Michelin Guide lists 12 rooms, most booking platforms 13, and one boutique hotel collection 14. It was not clear to us which applies, so ask the hotel if it matters. Room types published by booking partners include:

  • Single and double for single use: first floor rooms with a balcony.
  • Attic doubles: on the second floor, with skylights and blackout panels.
  • Superior rooms: roughly 30 m², some with frescoes, and a balcony over the street.
  • Deluxe room: with a terrace facing the inner courtyard, which is quieter than the street side.
  • Junior suites: the largest categories, either with a street-view balcony or with a balcony plus a courtyard terrace.
  • Family room: one source lists a room of around 50 m² for four. Ask the hotel whether it is still offered.

Rooms have air conditioning, heating, Wi-Fi, a minibar, a safe, robes and slippers. Recent guest reviews are positive overall, but a few mention compact rooms and bathrooms and missing small extras such as a kettle. One 2026 review also notes there is no lift, with two short flights of stairs to the first floor rooms, while another listing describes step-free access. If stairs are a problem, ask the hotel which rooms work for you before booking.

Dining

This is the heart of the review. The restaurant has held a Michelin star since 2015 and keeps one star in the Michelin Guide Italia 2026. Recent sources name Giovanni Santoro as the chef who won and has kept the star; the Michelin listing itself does not name a chef, so if the person in the kitchen matters to you, confirm with the hotel.

  • Tasting menus: the Michelin Guide describes four tasting menus, one following the chef’s inspiration and one built on fish and seafood. Dishes from all of them can also be ordered à la carte, which is unusual at this level and makes a second dinner easy.
  • Style: modern Sicilian, with Etna produce, mountain herbs, Nebrodi black pork and local cheeses. The inspectors singled out a creamy provola risotto with lemon, wild herbs and black truffle, and a lemon dessert.
  • Setting: two intimate rooms on the ground floor of the palazzo and a terrace for warm evenings. Michelin tags it as romantic.
  • Wine: the list is strong on Etna Rosso and Etna Bianco, as you would hope with the north slope estates on the doorstep. Cellar tastings and cooking classes are offered as paid extras.
  • Breakfast: served at the table, with sweet and savoury options.

The family also runs Dai Pennisi in town, a casual restaurant that grew out of the butcher’s shop where the family business began. Opening days for both restaurants are not published in a form I could verify, so ask the hotel and reserve your starred dinner when you book the room.

Spa and pools

Sauna with wood panels and stone details

The hotel’s full name on the Michelin Guide and booking sites is “Exclusive SPA and small gourmet hotel”, but set your expectations correctly: this is a compact wellness area, not a destination spa. It works as a private circuit that you book for a fee, so you usually have it to yourselves.

  • Sauna and Turkish bath: both part of the private circuit.
  • Hydromassage pool: a small heated whirlpool rather than a swimming pool.
  • Massages: available by reservation, at a supplement.

There is no outdoor swimming pool. One hotel collection lists an “indoor swimming pool”, but other sources describe only the small hydromassage pool, so do not plan on swimming lengths. If a pool matters, see the comparison below.

Sport and activities

Wine

Wine is the main activity here, which is why Shalai appears in our guide to wine hotels on Mount Etna. Linguaglossa sits at the eastern end of the north slope wine road, and many of the best known estates around Castiglione di Sicilia, Solicchiata and Passopisciaro are a short drive west. Some sources mention a Shalai wine label; whether it comes from the family’s own vines is unclear, so ask the hotel. For estates, tastings and how to plan the day, read our Mount Etna wine tours guide.

Golf

There is no golf at the hotel, but Etna’s best known golf course is close by at Il Picciolo, in the municipality of Castiglione di Sicilia, about 15 to 20 minutes’ drive away depending on traffic. See our Il Picciolo Etna Golf Resort review. Shalai has no published golf partnership, so ask the hotel for help with tee times.

Hiking and the volcano

Linguaglossa is one of the gateways to Etna’s northern side. The road up through the pine forest leads to Piano Provenzana, the starting point for guided jeep and hiking excursions towards the northern craters. Summit access depends on volcanic activity and official restrictions, so always book a licensed guide. Our guide to Mount Etna tours explains the options on both sides of the volcano. There are no tennis courts, gym or bikes at the hotel that I could verify.

What’s nearby

Sicilian coastline seen from Taormina at sunset
  • Linguaglossa: the Chiesa Madre and smaller churches are a few minutes’ walk away, and the town’s bars are the place for a morning granita.
  • The north slope wine villages: Castiglione di Sicilia, with its castle on a rock, plus Solicchiata, Passopisciaro and Randazzo.
  • Alcantara gorges: basalt canyons cut by the Alcantara river, a classic half-day trip.
  • Taormina: the Greek theatre, Corso Umberto and the bay of Isola Bella, under an hour away.
  • The Ionian coast: Riposto’s harbour and the beaches south of Taormina are the nearest places to swim.

Shalai vs other Etna hotels

Hotel Location Standout Best for
Shalai Linguaglossa, north-east slope Michelin star, private spa circuit, in a town centre palazzo Food lovers touring the north slope
Zash Country Boutique Hotel Archi, Riposto, near the coast Michelin star, pool villas, former winery Design and gastronomy close to the sea
Monaci delle Terre Nere Zafferana Etnea, east slope Own wines, organic farm, pool villas Wine lovers and slow travel
Il Picciolo Etna Golf Resort & Spa Castiglione di Sicilia, north slope 18-hole course among vineyards, about 100 rooms Golfers who also love wine

In short: Shalai and Zash both offer a starred dinner and a short walk to bed, but Zash adds pool villas and the sea, as our Zash review explains. Our Monaci delle Terre Nere review shows why that estate is the better pick for vines on the doorstep and a pool. Shalai wins if you want to sit right on the north slope wine road, in a real Sicilian town, with arguably the best restaurant on the north slope downstairs.

Who it suits, and who it does not

It suits:

  • Food lovers planning a trip around a Michelin-starred dinner.
  • Wine travellers who want to taste on the north slope without long drives each day.
  • Couples who like small, personal hotels run by a family.

It does not suit:

  • Anyone who wants a pool, a garden and long lazy afternoons at the hotel.
  • Travellers who expect big rooms and a full resort service.
  • Guests with limited mobility, until the hotel has confirmed step-free access to your room.
  • Beach holidays: the sea is a drive away, not a walk.

Charlotte’s tip: two nights, two dinners

Book two nights rather than one. On the first evening, do the full tasting menu with Etna wines. On the second, order a few dishes à la carte or try Dai Pennisi in town, and spend the day between them tasting on the north slope. Reserve the spa circuit for late afternoon, between the wineries and dinner.

Practical tips

  • Booking: reserve the restaurant, the spa circuit and any cellar tasting or cooking class when you book the room.
  • Best rooms to request: a junior suite with the courtyard terrace, or the deluxe room facing the courtyard. Avoid the attic doubles if you are tall.
  • Season: May, June, September and October are ideal for wine and walking; harvest weeks book up fast. Winter is quiet and cold at this altitude, and past closures have been reported over Christmas and in January, so check dates.
  • Check-in: from 15:00, check-out by 11:00, according to booking partners.
  • Dress: smart casual for dinner, plus layers for cool evenings.
  • Kids: children are welcome, but extra beds may not be available in every room. Ask the hotel about family options.
  • Pets: sources disagree on whether pets are allowed in the hotel, so ask before you travel.

Check prices and availability

Compare room types, from the attic doubles to the junior suites, and check whether your dates fall in harvest season.
